Former pupil, Elle Read, returned to TH this week to offer another Master Class to the current GCSE Food Technology students. Elle is currently a second year student on the Specialist Chef’s Scholarship Programme at Bournemouth and Poole College, and coming to the end of her first full year of training at The Goring Hotel in London. She prepared a dish from the hotel’s new autumn menu: Roast Orkney scallop served on a vadouvan sauce with pumpkin puree, pear dice and pumpkin seed crust, topped with a pumpkin tuile.
The attentive audience were delighted to be offered the opportunity to sample the dish and ask
questions about Elle’s journey into the world of Michelin Star food preparation. Inspiration indeed
for their forthcoming practical examination, where the focus falls on showcasing technical skills and
beautiful presentation in order to reach the very highest grades.
